I have some doozies that will get you through.

For now:

On those cool fall days

White Chicken Chili

1 tablespoon olive oil
2 lbs cubed boneless skinless chicken
1 medium onion, chopped
3 garlic cloves
2 (15 ounce) cans great northern beans, drained
32 ounces fat free chicken broth
2 diced serrano peppers
1 diced anaheim pepper
1 diced Cubanelle pepper
4 ounces diced jalapeno peppers
1 teaspoon salt
1 teaspoon oregano
1 tablespoon cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 tablespoon of chopped cilantro- OPTIONAL
1 cup fat free sour cream
1/3 cup fat-free half-and-half

Options- I like to cook down the peppers and onions in chorizo. Adds some fat but the payoff is FANTASTIC. Also, if you are in a hurry or don't like cooking your won chicken, buy a rotisserie chicken and shred it. The brown meat will add some fat but the payoff is good as well.

I like mine with a dollup of sour cream, a pinch of cheese, and a tablespoon or so of pico de gallo.
