Yeah I was thinking the same right now. I think there were only 4 fights with the interim champ vs real champ, it went like this:
Ortiz (real) vs. Couture (interim) - Couture
Serra (real) vs. GSP (interim) - GSP
Lesnar (real) vs. Mir (interim) - Lesnar
Lesnar (real) vs. Carwin (interim) - Lesnar
That's 2-2, with the most recent 2 being a win for the real champ. Unsure if I'm forgetting any others though.
