In the broadcast I watched they didn't pull the camera away, and Bendo actually let Diaz up when he flipped him off. Bendo most likely was going to regain top control since Diaz had lost the leg lock, and instead of getting into half guard and throwing elbows Bendo just got up.
So, really flipping him the bird basically got the fight back to the feet when Diaz wanted it to go back to the feet, and he didn't have to expend any energy doing it. That's some effective psychological warfare.
