Bisbing/Machida
Shogun/Babalu II (I know babs not with the UFC but its a dream match that COULD happen)
Theres so many good fights theres too much to type so basically anyone in the top 10 vs:

The ones I'd book:
UFC 80: Keith Jardine vs. Stephan Bonnar
Not terribly original but a lot of people thought Jardine got robbed so there is some unfinished business here.
UFN 12: Wilson Gouveia vs. Thomas Drwal
Something like that. See if Gouveia can pick up a win and add his name to the pile.
UFC 81: Forrest Griffin vs. Quinton Jackson
I've been told this fight is already pretty much set. Not sure if it'll be 81 or 82 though.
UFC 82: Bisping/Rashad Winner vs. Tito Ortiz
A match for obvious reasons in either case and likely to sell some tickets. And since Rashad should probably win, lets say a Bisping loss leads to the Hamill rematch on this same card.
UFC 83: Lets make this another 205lb blowout like UFC 76.
Shogun vs. Houston/T. Silva Winner
Bonnar vs. Jardine Winner vs. Jason Lambert
Lyoto/Sokoudjou Winner vs. Chuck/Wandy Winner for #1 contender status
