Ive seen a few horrible fights but the one that stands out because it was so hyped was AA vs Sylvia 3. one of the best was probably pulver/Gomi in pride what a slugfest.

One of my all time favorites is Don Frye v Takayama the stones it would take to stand there and trade.... and I mean really trade punches is ricockulous. One of my least favorite fights would have to be any of Oleg Taktarovs later fights due to scar tissue he would bleed after just a few punches. It was a shame because he was a tough bastard.
