I just finished watching the previous Ultimate Knockouts DVDs, and since they cut off at UFC 48, I feel it's time for UFC to come out with a new one, including some knockouts they left out that could have been in UKOs 3.
Here's my list for starters:

Burkman v Morgan... That was a scary knockout.
Hughes v Gracie just because it was legendary in UFC history
Cruz v. Mir because of the upset

The Burkman/Morgan fight is almost identical to the Ortiz/Tanner fight from UFC 30. A KO on the way down from a takedown and a few punches afterwards for good measure.

I think you forgot one of the best when Duane "bang " Ludwig had the 1st round KO and dude slid across the octagon on his friggin fore head. That has to be one of my favorites.

I believe that was Bang's 11 second KO of Jonathan Goulet, and based on the fact that it took only 11 seconds, it would make a list.
Some ones that I know I left out were:
Kyle pounding Sims head into the upper fence at UFC 47.
Burkman slamming Morgan at the TUF 2 finale.
Cummo kneeing Morgan during TUF 2.
