Dude, I just watched the fight. In round 2, Diaz pressed Penn up against the cage to wear him out (while constantly grabbing the fence btw). Penn was already tired, and shot a half-assed single, which he could have easily finished, and then just kind if collapsed with Diaz on top of him. By the time Diaz landed those "2 huge hooks to the left and right side", Penn was already exhausted. Just look at his face when he was pressed against the cage, or when he shot the single.
Diaz beat a smaller, out of shape fighter who has only ever beaten one guy at WW.

You're right. Anyone that has ever fought MMA, boxed, or even wrestled can appreciate the awesome cardio these guys have.
That's why I had to throw in the term "world-class". When you have guys like GSP, Jon Fitch, Carlos Condit, Rory Mac, Josh Koscheck, and Nick Diaz in your division, anything less looks it "sucks"...
