Roy is going to utterly smash Kongo, whose style matches up perfectly for either a Nelson KTFO or the usage of his BJJ. Seriously, Nelson by whatever way he wants. Kongo will eventually get clipped on the feet as there are holes in his striking and if he looks to take Roy down and GNP him, I see him being sorely outmatches and subbed. Kongo can try to bully Roy with his massive size, but I think this is a terrible matchup for him.
As for Vinny/Davis, I think Davis SHOULD win this fight, however if this gets to the ground there are maybe two other MMA fighters with as superior BJJ as Vinny and I think he subs Phil. Couple that with the HARD TROLLING Vinny has been doing and all that Team Lloyd Irvin drama, I think Phil may be coming to this fight with a few major distractions. Both of these guys are large LHWs and Davis will probably look to keep this standing, however if Vinny gets hands on him....WATCH OUT. Davis is the fave, but wouldn't shock me in the least bit if Vinny gets a slick submission.

Davis absolutely dominates Vinny. He wont even mess with his ground game, and I dont see Vinny coming close to getting Phil down... Phil has a huge advantage standing, he could even get the finish.
Kongo probably gets KO'd but it could be a good fight with the right gameplan... his skillset isnt as far from Roy's as people may think...
He should look to utilize leg kicks...
If Roy gets on top Kongo is in trouble, but he has improved his wrestling game a lot over the years, its not out of the question that he gets Roy down and control him from there...
Have a gameplan where Cheick utilizes his reach, kicks, and stright punches... throw in a few takedowns, press Roy against the cage, he could get himself a UD...
However I dont see him avoiding Roy's big shot. Quote:

Vinny is a beast, but Phil Davis is just another kind of animal.. That loss to Rashad made him a lot scarier, he should put a beatdown on Vinny and knock him out.
Roy also scores a big KO I think here. Kongo hits hard but Nelson doesn't go away, it'll be a hell of a fight.

Great fights!! I will be taking Roy by anything he pleases and it's tough to call but Davis by UD. Kinda WANT Vinny to win though.

Nelson walks through Kongo and lands the right hand to cash that ko of the night check. Davis will keep the fight standing and get the win

Another great thing about seeing the Kongo vs Big Country fight is the shattering of all illusions (assuming Roy wins) that physique and big muscles win fights. It'll be a real edumacation for the casuals.
