For your diet, just make sure to eat clean: lots of lean meats, plenty of veggies, and whole grain carbs inplace of sugars and starches.
Probably the best thing you could do for your training untill you start somewhere is like you said cardio. I would say distance running csome days and all out sprints some days (sprint hard for set distance then rest 60s then do it again)
You might want to check out the guys at American Top Team...they are based in Florida and have a pretty damn nice facility with a pretty good group of trainers....just a suggestion.
They train boxers and MMA fighters.

Sup fellas. Newbie to MMA in Florida here. I boxed in the military for a while, but that's as far as my fighting experience goes. I finally found a MMA gym near my home, and will start training this month. I'm gonna do alot of taking from this site, at least until I gain enough experiance to start giving. Any training, dieting or other pointers for a newbie will be much appreciated. Also, what can I do on my own outside of alot of cardio until I start training? I do have a speed bag and heavy bag in my garage that I have used for years, only for cardio and to keep up on my basic skills. Thanks.
