The name that springs to mind is Dan Severn.

Admittedly he was around when MMA was still in it's infant years, but he dominated very well with his wrestling, and had at least some submissions in his arsenal too

I'd say Matt Hughes is up there in terms of using his wrestling to become dominant. Same with Coleman

interesting to see how the best of wrestlers faired in mma competition. gardner won what essentially turned into a sprawl and brawl match against yoshida, and was somewhat impressive. karam gaber ibrahim, if i remember correctly, toyed with the best in the world in greco then went on to get his head caved in by the always tough (though never stellar) fujita in the first round. rosholt has some of the best collegiate wrestling in the UFC right now, but seems to lack what it takes to be a great fighter.

lindland set himself apart a bit and effectively used his wrestling in mma to by a top-ranked MW. i don't think he was every the pure fighter that henderson turned out to be, but he still left a legacy.

coleman has to get a mention. he was an olympian, and used a very effective (albeit one-dimensional) style to much success early in his career. funny enough, there was a time when he was considered the p4p best in the world.
