It's strategy.
If I'm winning the 1st 2 rounds, I've got no need to push too hard and risk a cheap loss.
Equally, if I've lost 2 rounds, it's my fault that I'm down and my responsibility to get a clean win.

the judges can institute another round kind of like the ultimate fighter

So you're proposing a 30 minute fight for championships, and a 20 minute normally?
And this extra round is to help create draws?
One of the best things about MMA, is there's always a winner and always a loser.
People records read 12-5-0 because Draws/NC are rare as Pope's jizz, and you always walk away knowing who your winner was.

how about no rounds at all

Stupid idea.
By 5 minuets into a fight, I'm (personally) exhausted. I need to step back, get some water & re-think. Take that away, and BIG mistakes will come
To have a no rounds means that it can only end by KO or submission.
If people are tired, then the chances of getting KOed are higher, and the more you are KOed, the higher your chance of being KOed.
If I'm tired and applying a submission, I may not have full control on it, and could SERIOUSLY hurt my opponent. No-one wants to seriously hurt their opponent!
This whole idea sounds like a pro-wrestling take on a legit sport. The last time that happened, the XFL folded within a season!
