| Healthy Recipes that taste good
Chimichurri:
1 1/2 cup Spanish olive oil
Juice of 2 limes
1 1/2 cup finely chopped fresh parsley
8 cloves garlic, finely chopped
2 shallots, minced
2 Tbsp each finely chopped fresh basil, thyme, and oregano
Salt and pepper to taste
compliments of Mr. Bobby Flay.
I use extra virgin olive oil I like the texture better.
Shit is like sex on steak.

Shit is like sex on steak. | Maybe I don't know what a chimichurri is, but shouldn't that have some sort of meat in it? Preferably of the bacon variety?

It's a marinade/dipping sauce.

If anyone is looking for low-carb, let me know.
I have some doozies that will get you through.
For now:
On those cool fall days
White Chicken Chili
1 tablespoon olive oil
2 lbs cubed boneless skinless chicken
1 medium onion, chopped
3 garlic cloves
2 (15 ounce) cans great northern beans, drained
32 ounces fat free chicken broth
2 diced serrano peppers
1 diced anaheim pepper
1 diced Cubanelle pepper
4 ounces diced jalapeno peppers
1 teaspoon salt
1 teaspoon oregano
1 tablespoon cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 tablespoon of chopped cilantro- OPTIONAL
1 cup fat free sour cream
1/3 cup fat-free half-and-half
Options- I like to cook down the peppers and onions in chorizo. Adds some fat but the payoff is FANTASTIC. Also, if you are in a hurry or don't like cooking your won chicken, buy a rotisserie chicken and shred it. The brown meat will add some fat but the payoff is good as well.
I like mine with a dollup of sour cream, a pinch of cheese, and a tablespoon or so of pico de gallo.

Get one of these "veggie trays" for your BBQ.
Cut up a mix of a few peppers (green, red, orange, yellow), red onion, garlic, mushrooms, green beans or whatever you like but the peppers turn out the best. Toss in olive oil. Heat the tray on the BBQ and pour the veggies and oil in. Cook, stir occasionally. Get some grill marks on the veg for the best taste.
Makes cooked veggies (mainly, peppers) taste amazing.
