On of my favorite quick meals is to take some chicken breasts and chop them anf cook them with taco seasoning and then throw them on a salad with some salsa and stuff.
Stir fry is easy and healthy as long as you use a decent sauce.
Another good one is cook a spaghetti squash and put some marinara sauce and chicken on it.
